Kalaycıoğlu Bozkır Tahin from Konya is roasted twice. Not once, like most tahinis in the supermarket or organic shop – twice. This second roasting makes all the difference: deeper nutty aroma, a slight caramel undertone, a warmth in the finish that is simply absent in simple tahini. And yet creamy, yet smooth – slowly ground on a stone mill, without heat that destroys the nutrients.

What makes this tahini special?
In Germany, two types of tahini dominate: industrial supermarket tahini and organic-certified tahini from health food stores. Both are usually simply roasted, mechanically ground, and optimized for shelf life.
Bozkır Tahini is different. It comes from a traditional artisan mill in Bozkır, a district in the Konya province – a region known in Turkey for generations for its sesame quality. The sesame seeds are roasted twice and then slowly ground on historic stone mills (Taş Değirmen). No salt, no oil, no stabilizers. Just sesame.
What does "double roasted" mean?
During the first roasting, the sesame is gently heated – it develops its basic aroma and releases moisture. During the second roasting, the natural sugars in the sesame seeds lightly caramelize, and the aroma deepens: nutty, warm, with a hint of roasted notes. The result is a tahini that tastes significantly more intense than single-roasted varieties – and adds more depth when cooking.
What is this tahini suitable for?
