"Cold-pressed" means that the olive oil is extracted from the olives at a maximum temperature of 27 °C. At higher temperatures - as is common in industrial processing - valuable ingredients are lost: polyphenols, antioxidants, vitamins, and natural aromas are destroyed by heat.
