Its compact size makes it the ideal choice wherever the olive acts not as an eye-catcher, but as an aromatic flavor carrier – in börek, pide, salads, stews and casseroles.
Despite its delicate size, it remains unmistakably a true Gemlik olive: thin skin, firm flesh, a pit that detaches easily – fermented only with water and salt, from the geographically recognized cultivation area of Gemlik in the province of Bursa.
